late cookies

I tried a new recipe. I like new recipes.

I meant to post this in time for the Holiday Cookie Exchange.

But it didn’t happen.

So I’m still going to share it anyway.

Chocolate Drop Cookies
1/2 c coconut oil
3/4 c honey
1/2 c milk
1/2 c cocoa
1/2 tsp vanilla
3 c oatmeal
1/2 c coconut

Mix coconut oil, honey milk and cocoa in a sauce pan and heat to a boil.

Remove from heat and add vanilla, oatmeal and coconut.

Drop tablespoons of mixture onto parchment paper. Cool and refrigerate.

(I ignored my perfectionist side and just plopped them down…not even in straight rows!)

We split the batch in half and my husband, lover of anything peppermint, added a few drops of YL’s peppermint essential oil to his half.

These aren’t much like the traditional no bake chocolate chewy cookies you’ve probably had. They do need to stay in the refrigerator or they start to get pretty soft, but not quite runny.

I liked them though.

They had all good organic ingredients, and of course chocolate, so OF COURSE I ate them! (but not all of them…I’m trying to loose the baby weight… holiday’s and all.)

    Mmmm, they look really yummy! but I might think I *need*/want the peanut butter, too. 😉

    Can someone tell me how you can possibly soak oats before using them in cookies?? I don't enjoy oats in my cookies like I used to… (altho' it's good for giving me a reason to not eat them)

    They look good! I'm right there w/ you on ignoring the perfectionist side…I have to do it too w/ those type of cookies.
